Heather Noble of Covered with Icing began baking with her siblings and mother when she was old enough to see the counter top. She entered her first county fair at the age of 8, bringing home blue ribbons for her Sour Cream Coffee Cake and Snickerdoodle cookies. She continued to bake for family and friends and spent years perfecting her recipes, especially for the best cinnamon rolls ever eaten and her favorite Red Velvet Cake. As Heather became older, she baked to relieve stress from her jobs, taking the finished products in for her co-workers to enjoy.
Heather made cute cakes for her little girl’s birthday but didn’t pick up a pastry bag until 10 years later when her son was a year old. She wanted the perfect cake for his birthday but lived in a small town with few options. The first cake she decorated was a Scooby Doo character cake and when her friends and family saw it, they slowly convinced her to make other cakes for them. She became hooked.
The next year her husband’s new job brought them to Middle Tennessee and it wasn’t long before his office asked her to make their birthday cakes. The word soon spread and she began making a few cakes a month. She took decorating classes, obtained a domestic kitchen license, permits, insurance and Covered with Icing was born.
Always in search of perfecting her craft, Heather has studied with some of the most well respected names in the baking industry like Food Network Cake Challenge winners and participants Bronwen Weber, Susan Carberry, Kaysie Lackey, Lauren Kitchens, and Michelle Bommarito. She even traveled to Louisiana to spend a week in classes offered by the Sweet Southern Ladies Designer Cakes, winners of The Ultimate Cake-Off competition on TLC. Heather was honored with the privilege of assisting former White House Pastry Chef Roland Mesnier during his sugar class in Nashville. Combining some of the techniques she’s learned with her own, Heather strives to make each cake she creates as unique as the customer ordering it.
